Tasting Note: Bright ruby-red wine with some purple highlights. Intense and complex nose with remarkable aromas of blueberry, licorice and cocoa, with a subtle touch of toasty notes at the end. Rounded palate of great balance, that shows very delicate and silky tannins and a touch of wild black berries, fennel and cedar on the finish.It pairs with baked meat, stews, aged cheeses, Iberian ham and charcuterie. Best served at a temperature of 14°C and benefits immensely from decanting.
Hand harvested bunch by bunch, fermented with its natural wild yeasts and aged for 10 months in French oak barrels, with 18 extra months resting in the bottle before release. Vines are as old as 60 years old grown at an altitude of 700m above sea level.
